Roasted grapes!!!! Yea, you read that right. Now, you need to ask yourself where they have been your whole life. Why aren’t we all doing this? I simply covered some green and red seedless grapes with some olive oil and salt then roasted them at 425 degrees for 25 minutes. They come out slightly wilted, sticky with caramelized sugar and ready to wow your guests. They would be absolutely divine in a salad. I chose to stick mine on grilled ciabatta with some burrata cheese, arugula and sunflower seeds. I couldn’t resist myself and had to make a fancy PB&J with the leftover grapes cold, straight out of the fridge.
