Stepmom Thanksgiving

On the years where my stepson isn’t with us for Thanksgiving, I prepare Thanksgiving twice. Once for him so he can have a nice Thanksgiving dinner with family, and then I prepare a second feast on Thanksgiving day.

​​It’s a lot of work, and it’s not easy, but I’d do anything for this child.
 
Because of him… I’m a mom.
 
I didn’t give birth to him, but he is my child.

​I take him to doctor appointments, go to parent teacher meetings, and make his meals. I teach him right from wrong, table manners, how to say yes ma’am, no sir and y’all. I take care of him when he’s sick, encourage him when he’s down, and I love him unconditionally.
To all of my fellow step parents out there… I see you. I know how much you carry on your shoulders and the heaviness in your heart. Don’t stop. Keep charging forward. Keep loving that child unconditionally. You’re making a difference.

Simple Roasted Sweet Potatoes

​It doesn’t get any easier than this folks. Big Strong Handsome doesn’t typically eat white potatoes, but he’ll eat sweet potatoes and purple potatoes. So, roasted sweet potatoes is something I make almost every week.
 
This is a super simple way to prepare them, and they’re delicious every time.

Roasted Brussels Sprouts

​Here's my easy recipe for perfectly roasted Brussels sprouts. 

​Simple, healthy, delicious.

To add a little zing, sprinkle on a touch of white wine vinegar at the end.

For a little indulgence, top them with crumbled bacon. So good!

Epcot Food & Wine Festival 2020

Not even COVID-19 can stop the Epcot Food & Wine Festival. The team at Disney really did a great job.
​
  • The park was only open to 25% capacity
  • Everyone was required to wear a mask over their mouth and nose or they could be asked to leave the park
  • There were markers as to where people should stand in all of the lines.

The weather was lovely, I felt safe, the food was delicious, and we had a great time.

I love cooking in the kitchen with my stepson. We’ve done this since he was little. I get everything prepped, measured out, and set up for him, and then let him go to town. He loves it!
 
We made this recipe for a school project. They were learning about the Dia de los Muertos (day of the dead) in Mexico.
 
Cook in the kitchen with your kids!

It’s messy.

It’s a lot of fun.

​And it creates memories that they’ll carry with them forever.
